Friday Favorites: Slow Cooker Recipes

Is it just me, or does time go by more and more quickly? And dinner, unfortunately is something I often dread cooking. Which is sad, because I really do love to cook. But at the end of the day, often times the LAST thing I want to do is stand in a kitchen for 40 minutes cooking. Am I right?! That's why I utilize my slow cooker as often as possible. Here are a few of my go-to slow cooker recipes for any time of year.

Chicken Teriyaki (serves 6-8)


  • 1-2 lbs of boneless, skinless chicken breast
  • 1 cup of soy sauce
  • 2-3 tablespoons of honey
  • a dash of rice wine vinegar
  • brown sugar as needed (or more honey)
  • rice
  • your favorite veggies


  • Mix the sauce together
  • Put chicken in your slow cooker and cover it with the sauce mixture
  • Cook on high for 4 hours or low for 8 hours (but ultimately, you know your slow cooker better, adjust for your own cooker)
  • Once done, shred chicken with a potato masher or forks
  • Cook rice, add cooked veggies, and top with chicken and sauce mixture
  • Enjoy!

Jalapeno Popper Chicken Taquitos

I'm obsessed with these! I've actually only made them once, but think about making them often. I just never seem to have all the ingredients to do it. These would be a PERFECT after church lunch while watching football. Recipe here.

Italian Chicken, Potatoes, and Veggies

I make this one A LOT. It's a classic. The nice thing about it, is you can really substitute any of the veggies with your favorites or whatever you have on hand. AND you can also switch out the spices. I'm notorious for thinking I have a certain spice only to find out I'm all out, so you can just omit it. This one is very kid friendly and easily adaptable. Chicken Fajitas

While regular (non slow cooker) fajitas don't really take much time at all, this is super easy and allows for easy clean up! You could easily serve this over a bed of rice or lettuce, but paired with your favorite corn or flour tortilla is just as tasty! Recipe here.
